Preparation of Jaggery
Jaggery is a coarse dark brown sugar made in India by boiling and cooling the sap (toddy) of palm trees. Sap is the fluid which circulates in the vascular system of a plant, consisting chiefly of water with dissolved sugars and mineral salts.
